We hired Randy for our wedding and we were very happy with everything! We served prime rib and chicken piccata and it was amazing. He showed up to our venue with his smoker and smoked the prime rib all day. There were no leftovers by the end of the night! Randy is kind, personable, and you don’t feel like you’re dealing with some corporate catering company.

We had a little over 230 people for our wedding and we had left overs and people were getting seconds and thirds! Not a single guest had a bad thing to say about the food! His entire team was extremely hospitable and went out of their way to serve us. Bride and groom even got special orders as a gift to us. When I do any other event I will be asking Bryan’s custom catering to do it without question!

I began my culinary career over 10 years ago catering events for The Southwestern Cattle Raisers Assoc. which lead me to catering other events such as weddings, retirement parties, birthday parties, company employee appreciations. I also custom smoke meats for individuals for their special events such as family reunions, and Thanksgiving, and Christmas. I found a love of food during this journey and it inspired me to graduate with top honors through The Escoffier School of Culinary Arts.

On the wedding day, the food was absolutely outstanding. The brisket was tender, smoky, and full of flavor, the chicken was juicy and perfectly seasoned, and the shrimp was delicious and cooked to perfection. All the sides were fantastic and complemented the main dishes beautifully. Our guests loved the food as well—they raved about it the entire night, with many going back for seconds and thirds!
What impressed us most was how seamless everything was. Randy and his team arrived early, set up professionally, and handled every detail with care and grace. They made sure the buffet stayed fresh and well-stocked, checked on us and our guests throughout the evening, and stayed until everything was cleaned up. We never had to worry about a thing. It felt like they truly wanted our day to be perfect just as much as we did.
